Looks like I can finish work early tonight ("early" being around 5:00 p.m. in my world) so Imma run some errands to take the load off my Sat and Sun errand-running and hit up the local burger place for a veggie burger and fries.

We had fettucini alfredo last night with broccoli and sauteed mushrooms. To die for. The night before we had Indian night with eggplant bhartha from a boil-in-bag thing and chana masala from scratch. I also made some chopped cucumbers in rice vinegar and sugar as our "salad" and instead of naan we used toasted pita brushed with garlicky butter.

Tonight it's leftovers, I think.

I am going to Trader Joe's for frozen artichoke hearts and kalamata olives because I want Mediterranean food.

So: probably some artichoke/kalamata pasta, grilled herbed tofu, lemony roasted potatoes.

Artichoke heart & kalamata olive-stuffed tofu cutlets baked in tomato sauce, Vcon lemony roasted potatoes, pan-seared broccoli, steamed spinach tossed with lemon juice and toasted cashews!

I am really proud. This was really -- like, reeeeeeeeally! forking good!
