We're having a friend over tonight and he's pretty picky, but oh well. I'm sure we'll enjoy it:
BBQ seitan sandwiches with vinegar slaw (using steamed white seitan from VV and backyard BBQ sauce from Veganomicon) balsamic chickpea salad Dessert: MUG BROWNIES
I need to buy some buns for the sandwiches tonight.

I have a lot to do tonight (like getting ready for my youngest son's birthday, which is Friday, but we're celebrating tomorrow because it's a day off work for me and school for my oldest), so tonight's dinner will be one of my super-simple cop-out meals like Boca chick'n patty sandwiches with spinach salads.

lots of extra tofu at our house, which means cripsy ginger-teryaki tofu, broccoli and carrot stir-fry, and curry tofu "egg"rolls with spicy pineapple chili dipping sauce!

Had beefy bacon burgers from 500 Vegan Recipes, in homemade buns with red onion, tomato, cucumber, jalapeños, ketchup and guacamole. Yeah.

Seitan piccata over mashed potatoes for me. I was suckered into the 8 lb bag of potatoes at the grocery store last weekend and I'm trying my best to use them up before they go bad.

Tonight's probably boring leftover pasta marinara, but last night was glorious! I made the tofu mole tacos I was talking about. Cocoa mole sauce over hickory smoked tofu, grilled portabella strips, a diced orange bell pepper, and some black beans. We piled that into whole wheat tortillas and topped it with some Tofutti BTSC, and Adam made guac to eat on the side with chips.
Holy crepe. Amazing.

slow pho from fresh from the vegetarian slow cooker. the broth is simmering away with spices, and tonight i just have to cook rice noodles and chop up toppings. it smells so good already.
