Making sushi tonight with cucumbers, avocado, and miso tofu. Probably some miso soup on the side as well.

Change of plans! Mushroom soup with quinoa, roasted corn, and sesame kale salad.

I didn't feel like making pizza dough and we stopped at a farm stand for fresh corn.

Turns out we were out of sushi rice, so we had noodles with peanut butter, sriracha, soy sauce, and nappa cabbage. Super delicious. Sushi tomorrow!

I'm going to eat cake for dinner, because I have no money until payday tomorrow yet I have an abundance of freezer-cake. Also, damn it, I'm 25 years old and I do what I want.

I had a looooong day at work and came home to delightful spicy Szechuan green beans made with my prized first home-grown serrano pepper, roasted summer squash with melted cheezly, and a decidedly less-exciting-but-still-delish filler of pita with chipotle roasted garlic homous.

I'm making enchiladas filled with black bean chilli, coconut & coriander rice, coleslaw, avocado, & lime sour cashew cream. There's also a Victoria Sponge in the fridge filled with whipped cashew cream & blackberry jam.

I have an omni friend over for dinner and I'll make chickpea cutlets with curry sauce, roasted green beans, and either roasted potatoes or the lemony potatoes form Vcon. As a side, a garden tomatoes with basil salad.
I'm thinking of making the mushroom walnuts pate and serve it as little aperitiv on crackers, all piped out like frosting.
For dessert I'll stick with fresh cantalupe or watermelon.
I'm hungry already!

Trying to have a cheap cooking week, so I made rice stir-fried with things that were in my cupboard/fridge/freezer: chickpeas, kalamata olives, jalapenos, sweetcorn, peas and a kind of tahini sauce mixed in. It was pretty good for a "stuff I've got lying around" kind of dinner.

Gardein orange chickenless bits with broccoli over basmati rice sprinkled with gomasio. I found out the orange bits are free of quinoa & amaranth so I can eat them. However the ones from TJ contain it...

My plan is to try out something from the Vegan Sandwiches cookbook that I picked up from the library yesterday without buying too many ingredients. At the least, I think I'll be making one the seitan recipes tonight.

They are good! Next time I think I will get some extra sauce or something to go with them. The burger patties (2 per package) are also free of quinoa and amaranth and we plan on grilling them this weekend! It looks like if Gardein uses wheat gluten they do not use the quinoa mix...

Missmuffcake, it's to bad we can't buy a bag of Gardein and split up the ingredients: I'll take all the quinoa and you can have all the amaranth! Thanks for the burger tip and the bit about gluten!

Tonight I'm making v'con Israeli Couscous with Pistachios and Apricots, Turkish Green Beans, and Falafel.

Ohh, I am allergic to both quinoa & amaranth! :/

Vcon baked tofu, with the apricot bbq sauce (but I substituted nectarines for the apricots) and pasta salad.
