Indian-themed dinner party tonight! Palak Tofu from The Indian Vegan Kitchen, veg’d Butter Chicken modified from the recipe on the spice mix packet, Samosa Stuffed Baked Potatoes from V’con, and plain basmati rice. Then, to help recover from all that spicy food, a banana coconut ice cream pie in a GF version of the Chocolate Shortbread crust from VPITS.
I cooked everything last night, so now my house smells amazing and I really, really can’t wait to leave work and eat it all.

Butternut Squash and Apple Soup (I may have botched the name of it) from AFR and slices of this super yummy garlic and rosemary artisan bread loaf I made this afternoon.
Tomorrow will be either left over soup, or, polishing off the Upside Down Lentil Shepherd's Pie (with Caulipots) from AFR that we had night before last.

Mashed potato-cauliflower-spinach casserole, roasted oyster and black mushrooms, ginger roasted bok Choy, roasted beets with a cashew-jalapeno-lime-cilantro sauce. Realllyyy tasty. For desert: chocolate banana soft serve with these frozen cashew-chocolate fudge sticks.
