Taco night for me too. The rest of the family is going out to eat at a restaurant that doesn't have any vegan options, so I'll be all alone. I'll use up some odds and ends and make seitan tacos with cauliflower queso and avocado salsa.

we're having friends over for dinner tonight - i'm so excited! we'll be making:

babaganoush (with local eggplant)
hummus (i even skinned the chickpeas!)
VWAV falafel (made gluten-free)
pita bread & gluten-free flat bread
quinoa tabouli
grilled bell peppers 'n onions
pickled veggies (carrots, scallions, red onion and cucumbers)
roasted beets with lemon & garlic
lemony tahini dressing 'n tzatziki

That sounds like a fantastic spread, happyfaced!

We got fun stuff from our CSA: purple potatoes, purple peppers, tomatoes, purple kale, purple corn (they had an adorable purple/red theme this week), so I'm thinking garlic fork-mashed purple potatoes with a kale salad with peppers and tomatoes, along with some sort of baked tofu.

Last night's taco were a really delayed effort and the tempeh was a miss (and too salty! gah!), so tonight's a redo with more of the same, rice cooked on time, and baked tofu cubes.

A big pot of vegetable curry- broccoli, potatoes, bell peppers, onion, tomato sauce and diced tomatoes... everything. And some brown rice and the last of the general tso's tofu.

Me too! So instead of what I predicted we had mashed purple potatoes with garlic olive oil; beets, shallots, and garlic with lemon juice; and leftover seitan (OMG jdfunks...I forgot about our seitan!). It was delicious in its simplicity.

PS...the seitan improved after a few days in the fridge.

I've making a green curry. I just whizzed up a bunch of fresh coriander with garlic, onion, ginger, chilli, coconut milk. I didn't have any lemongrass :( It's simmering away now with some vegies. After four days of being mostly raw, I'm EXCITED.

I made a nearly perfect wrap. Couscous (of course), Annie's Goddess Dressing, grated carrot, chopped cucumber, diced red onion, naked tofu scramble from Low Cal Vegan Comfort Food (I added lemon juice, cumin, and paprika), spinach, all on a whole wheat flat bread.

thanks, vijita! it was enjoyed by all. also, i love the purple theme your CSA had going on. yay!

tonight we're having beer battered tempeh with roasted lemony brussels, broccoli-pots 'n pepper gravy. plus, it's football sunday. yesssssssss!

I had corn past its prime and mashed purple potatoes. Not the most well-rounded meal, but I wasn't feeling so hot. The potatoes were good but I felt really nauseated afterward. I think my body is telling me to eat better during the day.
