Porcini tofu burgers, probably with a side of curly fries. I kind of feel like burgers with porcinis need a fancier side dish, but... curly fries!

I'm attempting a "meat loaf" with walnuts, fresh basil, and cannellini beans (and VWG as a binder). Will keep you posted if it works out.

So very tired tonight that we pulled some zucchini soup out of the freezer and had that with bread, a Fry's chicken style burger and raw toppings like tomato, gherkin, lettuce.

Oh my gosh you guys. Last night I made the best dinner I've had in a long time!

I made an amazing jerk sauce with ground spices that were soaked in eau de vie for use in spiced cider-making, and I included some rum cider, a couple chilies, garlic, and some other stuff. So I smeared that on tofu and baked it. I also made a jerk rice with more of those spices/some veggies/white basmati/cider etc...and served the whole thing with crispy kale. I can't take all the credit for this--my boss and I veganized her version of jerk chicken rice and I adapted a few things, but OMG so good.

Tonight: Leftovers. I work a night shift at a wedding so maybe if I'm lucky I'll also get to snack on something vegan from the caterers.

I tried the green ben piccata with seitan from V'con tonight and it was good! The seitan was a bit dry but I probably over-fried it a little. As side dishes we had oven-roasted caramelized carrots and some leftover potato mash. Fresh tomato soup for starters. Life is good! :)

I meant to make salad rolls for lunch and didn't, so there's so much coming for dinner! Vietnamese salad rolls with smokey seitan and tofu (adapted from World Vegan Feast), Island black bean burgers over lettuce, and OMG baked onion rings (which I'll pass on, but my girlfriend will be THRILLED about). I'm testing out the salad rolls tonight to see if I want to make a massive amount of them for a cocktail party tomorrow night.
