Jerk tofu! Made by my boyfriend, so it will be delicious even if he does fork it up, because I don't have to do anything. And probably some cabbage and rice.

I made steamed sausages with pizza seasoning earlier today. I pan fried one of the sausages for dinner and ate it with spaghetti marinara. It was so good, and way more filling than just a bowl of spaghetti.

Pretty lazy dinner--made some refried beans from some pinto beans I cooked and froze earlier, and am eating them with brown rice, avocado and Tapatio.

Bagel melts with cheddar Daiya, basil pesto, and tomato slices (we got the last harvest of ripe, red tomatoes from my partner's grandparents' garden!)

tots! now i want them!

tonight we're having "fancy" veggie burgers (frozen burgers 'cause i'm lazy but they'll be topped with slices of slow-roasted tomatoes, avocado & sauteed peppers 'n onions) and baked taters.

Julialegume and I are at my sister's in Brooklyn, and at Jules' suggestion, for her last night we had Syrian lentil soup (Bean by Bean), garlic bread and spiced tator tots. Everyone but my sister's boyfriend loved the soup and had two bowls.

I made a miso-based soup with kale, whatever choy I got from my CSA (jdfunks come identify it for me!), sprouted barley, marinated tofu, scallions, garlic, and hot peppers. It is freezing here and I needed soup!

I think tonight is going to be tempeh meatballs and roasted spaghetti squash (which I've never had!), with marinara. And maybe a kale salad.

My favorite! Do you have a particular recipe you like? I make a very simple and not at all authentic version based on a recipe I got off a box of rice noodles.
