Everything was cooked already so it was 20 minutes in the oven on 350 F, mostly just to brown the tots. Dinner tonight will be simple- sandwich with mayo and tofurky and a side of greens.

A sort of salad (I made it in advance and it was all cold... so I guess it was a salad, but not necessarily in the traditional sense) of roasted beetroot and sweet potato, green lentils, and a wild rice blend, with a tahini dressing. I would've had some rocket and watercress also, but it had all been eaten while I wasn't at home!

Fried rice tonight - using up the bulk of the veggies I pre-chopped this weekend, and probably a good portion of the white kimchi I made. I think my partner will probably heap on the regular kimchi. He likes it spicier than me!

Oh She Glows Butternut squash mac 'n cheeze. It got a lot of hype, but I'm honestly not bursting with enthusiasm for it. Easy and tasty though, to be fair.

I really like Korean tacos, so I'm sure banh mi tacos are equally delicious. Last night we had girl's night (a semi-regular occasion where me, my boss, and her assistant hang out, eat, and bisque about work/drink wine). My boyfriend is always there too, because it is held at my house, so we ordered a smorgasbord of Thai food. Green curry, pad thai, fried rice, like a zillion veg spring rolls, and red curry. It was really yummy, and I'm so happy that they don't mind ordering vegan. I'm really picky about Thai food--iffy on coconut milk and not usually a pad thai fan, but yesterday's hit the spot.

I can't stop thinking about the sopa de fideo I made a couple of weeks ago. I have food for tonight already, but I think I might make that too, since it's Halloween and I'm craving.

Slow cooker chilli! It's been in the cooker all day (my kitchen and living room are the same room) and it smells SO GOOD! I'm so hungry but it still has another hour and a half to cook :p
