I had potato-corn chowder for dinner with gingerbread oatmeal for "dessert" and now I'm having dinner #2 - a whole of black-eyed peas with sriracha, balsamic vinegar, and salt. Weird, yes. Strangely good, yes.

I would have sworn I signed up for this forum before... but oh well I guess I'll use my first post to mention how yum my dinner was: Chickpea Quinoa Pilaf (Vcon) and Caesar salad (Vcon). I don't think I can settle for store-bought dressing ever again after that caesar...

I just made a super yummy carrot, cabbage, and greens curry with lots of spices/ginger/garlic/cider and jasmine rice.

BLTs with green monster bread from VSSTD and smokey curls from Vegan Diner. I used maple syrup instead of agave on the smokey curls. So good!

Basically de-constructed nacho bowls with a brown/black rice mixture, chipotle sauce (AVC), avocado, slow-cooked black beans, salsa, jalapenos and tortilla chips.

Now that it's bedtime, and I have to get up in 4 hours, I'm regretting just eating Tings today.
I think that in the excitement of menu planning and grocery shopping, I just forgot to eat. Weird.

I just devoured a bowl of random odds and ends: barley rice, pinto beans, and broccoli sprouts, all covered with a made-up white sauce. SO GOOD. Or maybe I was just SO hungry.
I also snacked on raw mushrooms dipped in Veganaise because it's 11:30pm and that's how I roll.

I'm steaming the Smoky Seitan Roast from Vegan Diner right now. (It's the first time I'm making it and only my second attempt at seitan, so fingers crossed!) If it works, I'll be making some zuurkoolstamppot (mashed potatoes with sauerkraut) and serving it with some of the roast and gravy.
