I made the Louisiana style red beans and rice from the Fat Free Vegan blog. They were super tasty and easy, not counting the fact that they actually cooked well over 12 hours before being done. I used old beans, so that must be it. Nothing to fault with the recipe. I especially liked that this recipe appealed to my laziness by suggesting using the food processor to chop all of the veggies.

Spinnakers! You just have to ask for a vegan dip for the pakoras as it's usually a yogurt dip. The soup is usually vegan and always vegetarian. :) The thing that sucks about Spinnakers is that the beer isn't vegan, but if I drink I usually just get a glass of wine.

Taco night! Taco shells made in the oven out of whole wheat flour tortillas, tvp taco meat, cheesy (daiya) refried beans, sour cream, black olives, and queso.

finally got around to making hottie black eyed peas & greens from AFR, served with the recommended mashed sweet potatoes/apples thing. For dessert peanut butter/chocolate fudge!

Black bean and mushroom tacos. The mushrooms were an afterthought cause they needed using up. I sautéed them in anatto infused oil, garlic, onion, two kinds of chili, and smoked paprika with a splash of wine. They were the best part of the meal.

I made the PPK blog seitan roast (stuffed with the dressing from Vegan Diner, because Boyfriend hates mushrooms) on Sunday as a practice for Christmas. It makes a ton! So we're having the last of the leftovers tonight. I'll also roast up some veggies (potatoes, sweet potato, carrots and onion). We used up all the gravy on another night's leftovers though, so I'll probably do something offensive like eat it with sweet chilli sauce.

I took leftover mashed potatoes and mashed in chickpeas with spices, hotsauce and breadcrumbs to make chickpea croquettes (or something?). they are good! and now i dont feel bad for just eating mashed potatoes for dinner. there's protein in them1

It's pretty easy to make but takes a couple of hours. You have to make the dough, let it rest, roll it out and fold it up, let it rest again then roll it out and cook it. The cooking is really quick, just in an oiled frying pan for less than a minute on each side. They're totally worth the time it takes to make them as they're delicious.


Tonight we had VWAV jerk seitan with rice.

I was almost too lazy to cook, but I bullied myself into making some marinara sauce and had it with whole wheat pasta, roasted zucchini, and lentils.
