I was going to make refried beans, but I added tons of spices and oat milk, and ended with red kidney bean curry.

I made veggie lasagna with onions, garlic, spinach, mushrooms, shredded carrots and zucchini, tofu cashew ricotta and daiya moz. Asparagus on the side. Not bad, not bad at all!

Apparently my sister-in-law (to be) is making a vegan gnocchi with a sage cashew sauce. I am delighted/impressed/excited! My boyfriend made chocolate chip cookies last night. I sat there watching with my jaw dropped as he worked without a recipe and just threw stuff together in a bowl. I am RELIGIOUS with recipes when it comes to baking. He did use ener-g, so I shunned him for that to make myself feel better, but they are actually really quite good.

Leftover enchilada casserole, from OSG. We're going to a family friend's for Christmas Eve, and the omnis are having Caesar salad, shepard's pie, and seafood chowder, as per holiday tradition.

Stuffing, roasted butternut squash, corn, rice, cranberry sauce, roasted zucchini and peppers, and some salty orange colored tofu. With the exception of the tofu, mom made everything. Saves me some work!

I tried to make my failed brown rice-stuffed baked tofu more edible by frying it with veggies, tamari and hot sauce. Didn't work that well, unfortunately.

Incredibly ghetto tomato soup (I'm super broke post holidays and using up as many of the ingredients I have in cans rather than going shopping). Later tonight when I return from Les Mis, it will be tots and mulled wine. KEEPING UP THE CLASS.

Tonight I had quinoa with roasted carrots and onions. The last of my vegetables. I'm going to try to go another week at least before I buy food, so it'll be interesting. Maybe lots of oatmeal.
