We had my FIL and family over tonight, and it was his birthday yesterday, so I made minestrone soup, maple-mustard-dressed green salad, and warm ciabatta bread with EB. And lemon cupcakes for dessert.

tried recreating a childhood dish....mushroom soup & 'chicken' over rice. i liked it but will need to play around with it a bit more next time! I also ate some kale chips - because at $6 a box I must eat them all.

Ramen - super cheapo instant noodles with broccoli, onion, carrot, red pepper, spring greens, ginger, soy sauce, chilli sauce, soy milk and seitan pot roast. I could eat this stuff every day. I have so far this week - twice today!

Brown rice, chickpeas, sauteed onions/broccoli/garlic with a 'mango pineapple coconut' sauce that has... some kind of hard alcohol in it? A tiny bit? Found it at market basket and it's totally vegan. Priiiceeyyy, but good.
