I made an herbed-up version of the Candle 79 wheatball dough last night that I'll bake for spaghetti & meatballs later...assuming I make marinara and get spaghetti, of course.

quinoa/red lentil combination with black beans, plantains, frozen spinach, frozen peas & a bit of onion over it, a pineapple/mango/coconut sauce mixed in. Surprisingly delicious (mostly because of the sauce out of a bottle)

Food here was pretty good though. We had: VEW "nutty seedy dippy stuff" (dukka) with veggie sticks and pita for dipping and then Egyptian fava beans with preserved lemons and parsley and green tahini sauce.

I think it would totally work. I would just add what you estimate might be that amount of spinach fresh...and air on the side of more since frozen spinach is packed down but also watery.

Tonight I'm making jerk soy curls with rice and black beans. It's my boss' recipe that she veganized for me and it uses the rum cider we make. I'm feeling very run down and cold so this should do the trick to perk me up.

The most amazing cheese sauce spaghetti dish I've had in over three years.

It was sauteed onion and garlic with a pinch of smoked paprika and nutmeg with 1/4 of my batch of brie (From the AVC recipe.) melted in, some margarine and some plain soymilk, tossed with peas, steamed broccoli and spaghetti, salt and pepper.

Inhaled the whole plate in a ridiculously short time. YUM!
