Leftover red Thai tofu, green beans with regular basil (instead of Thai - can't seem to find it here), and Bhutanese pineapple rice (but made with jasmine rice), all from AFR!

Restaurant Mysore masala dosa with rasam and coconut chutney. It was decent but the dosa could definitely have been more crisp. I need to remember that I don't like my dosas filled.

I made minestrone which sounds super boring but we were both craving something just warming and comforting (and easy), and we also had roasted potato wedges, and salad with sprouted garbanzos, spinach, roasted beets, marinated red onions, and cucumber. It was nice if not a tad dull, and notably the first time I've been able to convince myself to eat salad enthusiastically in January.

Last night had a really nice, simple dinner. Tofu baked with olive oil, herbamare and black pepper, sweet potato fries with smoked paprika, and cabbage and broccoli sauteed/steamed with garlic and chilli. With a bit of salsa and a tiny bit of hummus for dipping.

Making white chicken (soy curl) chili at the moment. Haven't made white chili before, it smells fantastic. Will probably top it with avocado, maybe some salsa and hot sauce, and the last of the cashew queso I made last week.

Veggie pho with tofu. I heart this dish. Even though I know it's a sodium bomb, eating a giant bowl full of broccoli, carrots, cabbage, red peppers, mushrooms, bean sprouts, tofu and noodles makes me feel healthy. I always load it up with cilantro and chili paste, too. Yum.

We're doing a clean-out-the-fridge soup. Things that will probably make it in there: last-leg-celery, carrots, zucchini, broccoli, and maybe a potato or two for creaminess. I also have some kale that's wilting that I might throw in there. After stewing in some broth, it's all going in the blendtec with a bit of soymilk and spices. Smoked paprika, maybe. Hmm.
