Goan-inspired coconut curry with black-eyed peas from Vegan Indian Cooking. I had a bowl earlier with a piece of garlic naan (not homemade).

I'm thawing some curry lobia from VEW and will probably pair it with a potato curry dish of some kind since our potatoes are growing eyes.

Last night was coconut rice, pomegranate tofu, and bok choy with crispy shallots. Tonight will be leftover rice with lentil Balti curry and homemade naan.

We're having lasagna, Oh She Glows caesar salad, and my signature artisan-style ciabatta loaf. Then tarte tatin from Chloe's book, (but without whipped coconut cream, because my can of coconut milk stayed emulsified and never separated when chilled).

Open faced sandwiches! Tempeh bacon, mayo, and different kinds of mustards. I realized I have 9 kinds of mustards, so I'm dealing with that issue.

Clean-out-the-fridge spaghetti with roasted cherry tomatoes, garlic, red bell pepper, the last of my no cluck seitan, pan-fried, all topped with chopped green olives, AVC Parmesan and nooch.

I'm making the VYY Italian rice and beans for my parent's tonight. Going to add some seitan pepperoni, I think, and serve it with broccoli and avocado.
