Total lazy. Wegmans Gardein style chik'n strips sautéed with one of the vegan Frontera sauce packs (I think 3 of them are vegan). On a tortilla with spinach, Tofutti sour cream, and avocado slices.
I didn't eat much though because I mostly ate PPK blog chocolate yogurt cake for dinner.
The Frontera sauces are really yummy; you can do worse for a super quick packaged meal. Last time, I had it with cubed crispy tofu and I think I liked that better.

My CSA gave us delicious potatoes! So I made mashed potatoes and leeks with porcini gravy. And I had a fierce craving for grapefruit juice so I drank like a litre of that during the hockey game.

Yesterday I saw an omni recipe for a kind of white lasagna with seasonal veg. I had most of that veg in the fridge so I winged it vegan style! Leeks, belgian endives, parsnips and mushrooms w/ white whine and a cheezy sauce instead of bechamel, spinach lasagna leaves. nom nom nom. Leftovers tonight!

Schnitzels from the vegan butcher in Sydney, with caulipots, maple roasted carrots and two-pepper gravy. We usually have a German-style feast when we get those schnitzels, but it was kind of fun to eat a novelty 'meat and two veg' meal.

I'm making Pepperoni Pizza Monkey Bread. I made Big Stick Pepperoni from Vegan on the Cheap, and Melty Cheddar from Artisan Vegan cheese. I will probably add in some onions too.

Get ready to be jealous. I went to a vegetarian (and vegan!) cooking class and we had a five-course meal including summer rolls, Thai gyoza, Tom Yam soup, gingered lemongrass mock beef with green beans, green curry with tofu and mock chicken, a delicious tofu, veggie, and vermicelli stir-fry, and deep fried banana for dessert. It was so fun! I really needed to decompress from work, and this was the ticket.

I'm having a bunch of lentils with a random potato-corn chowder thing that was in my freezer. Kind of boring, but filling.
