Last night I made stuffed sweet peppers, which were lovely, but the couscous/chickpea stuffing made enough for about a gazillion peppers, so tonight I'm having a bowl of cold stuffing!

Oh my! I want this now. It sounds amazing. I was planning a peanutty noodle dish with tofu, kale, and carrots. But now it doesn't sound as good as your meal. I might have to make that this weekend - pineapple salsa is the best!
