Super random - half an avocado with S&P eaten with a spoon, cornflakes with Amande coconut yogurt, and a bunch of Enjoy Life plentil chips.

What are mushroom nuggets?
I skipped dinner tonight, so I needed to come read this thread. I have a lovely AFR shepherds pie, but my stomach is too sore and I've been afraid to eat all day. Vicarious meals.

Sigh. I worked another wedding tonight, so I was fed by the caterers, but this time my only option was a baked potato with chives and horseradish. There were roasted veggies, but they cooked them in butter. Lame! And I ate some potato chips when I got home. So basically I only eat potatoes now.
They had two vegan cupcakes for their one vegan guest, who didn't show up. I almost cried when they packed up those cupcakes and left us with the dairy ones, and I don't even like cupcakes that much.

Sauteed onions, mushrooms, zucchini, brussels sprouts and tomatoes with balsamic vinegar over whole wheat pasta. Yum yum.

Last night I made the sides for a potluck-y dinner with my friend. I made cucumber salad, green beans with a lemon tarragon vinaigrette (LTEV), and the garden variety variation of the caulipots! Oh, and banana bread from Forks Over Knives. Everything was super good!

I have a tofu quiche with a brown rice crust in the oven right now. I ate a third of a bunch of kale chips as an appetizer.

I made mac & cheese with Daiya, which I hadn't done yet. Wow, it was an amazingly familiar experience to good old Velveeta! The plasticy texture was spot on, and I mean that in the best way.
