Bruschetta night! Eggplant caponata for me, some kind of tomato concoction for Boyfriend.

Super random - half an avocado with S&P eaten with a spoon, cornflakes with Amande coconut yogurt, and a bunch of Enjoy Life plentil chips.

Mac & cheese and leftover smokey chickpeas doused in Louisiana hot sauce. Must buy kale.

Mushroom nuggets in whole wheat pita, with ranch dressing, avocado, lettuce, tomato, red onion and pickles.

What are mushroom nuggets?

I skipped dinner tonight, so I needed to come read this thread. I have a lovely AFR shepherds pie, but my stomach is too sore and I've been afraid to eat all day. Vicarious meals.

Sigh. I worked another wedding tonight, so I was fed by the caterers, but this time my only option was a baked potato with chives and horseradish. There were roasted veggies, but they cooked them in butter. Lame! And I ate some potato chips when I got home. So basically I only eat potatoes now.

They had two vegan cupcakes for their one vegan guest, who didn't show up. I almost cried when they packed up those cupcakes and left us with the dairy ones, and I don't even like cupcakes that much.

Chickpea cutlets, lemon-dill caulipots, peas, and a dollop of mustard. Mmmmm.

Roasted red pepper and green pea risotto

Sauteed onions, mushrooms, zucchini, brussels sprouts and tomatoes with balsamic vinegar over whole wheat pasta. Yum yum.

Super snacky - a bunch of almond butter (with a spoon!), spinach with marinara & nooch, cornflakes with chocolate almond milk.

Fresh pita, pintos and mashed avocado. Pretty odds and ends.

Greek feast: gigantes plaki, almond feta saganaki, lemon and garlic braised potatoes, steamed spinach, and oil-cured olives.

We had a girls night potluck! I finally made the pumpkin ziti, and my friend made magic bars! We also made tea sandwiches with tofutti cream cheese, pesto and cucumbers.

Tacos! Refried black beans, corn, onions, garlic, jalapenos, tomatillo salsa, guacamole, mushrooms, and homemade tortillas. Really, really hit the spot.

Pineapple cashew stir fry from Peas and Thank You. I love sweet and sour!

Last night I made the sides for a potluck-y dinner with my friend. I made cucumber salad, green beans with a lemon tarragon vinaigrette (LTEV), and the garden variety variation of the caulipots! Oh, and banana bread from Forks Over Knives. Everything was super good!

BBQ tofu, garlicky sweet potato home fries, corn and some sort of green veg (kale or broccoli).

same thing as breakfast: left over pizza.

Whole head of roasted cauliflower with nooch, marinara and avocado!

Lasagna! Tonight and for the next 5 nights. I love leftovers!

I have a tofu quiche with a brown rice crust in the oven right now. I ate a third of a bunch of kale chips as an appetizer.

Wild rice and mushroom pilaf, roasted butternut squash with shallots, rapini with garlic and lemon

cheezy pasta bake and garlic bread!

I made mac & cheese with Daiya, which I hadn't done yet. Wow, it was an amazingly familiar experience to good old Velveeta! The plasticy texture was spot on, and I mean that in the best way.
