Sloppy joes from Vegan Diner. I loved the addition of mushrooms, but I did add 2 tsps of yellow mustard. There's just something about yellow mustard in sloppy joes that I can't resist.

This is the best thread on the whole PPK. I am always jealous of everybody's dinners!
I had a coconut almond butter smoothie while at work tonight, then some pierogies (please, please, please, Costco, start carrying these regularly. Ok?)

I just had some chickpeas over brown rice cooked with lots of chopped roasted tomatoes, ginger, parsley, and coriander. I'll be making that again. :)

The bananas keep it really moist (along with the applesauce and maple syrup, probably), and I thought it was plenty sweet enough for a breakfasty item and I have a pretty bad sweet tooth. Cost is going to depend on how much maple syrup is going for in your area. The recipe calls for 1/2 cup, but there aren't any other expensive ingredients in it, so at least it's not TOO bad.

Can I call reheated brown rice with a mess of bottled salsa mixed in "Mexican rice"? If so... "Mexican rice". I feel like crepe and am not up to doing anything more than that.
