I don't think it tasted any "healthier" than most banana bread recipes, and I really liked it! The bananas keep it really moist (along with the applesauce and maple syrup, probably), and I thought it was plenty sweet enough for a breakfasty item and I have a pretty bad sweet tooth. Cost is going to depend on how much maple syrup is going for in your area. The recipe calls for 1/2 cup, but there aren't any other expensive ingredients in it, so at least it's not TOO bad.

Last night was the "Persian multi-bean soup" from Mediterranean Vegan. I completely bastardised the recipe, most significantly by adding three times the amount of spaghetti that I was supposed to, so it was more like slightly liquidy pasta than soup... but it was good stuff! I'm looking forward to the leftovers tonight.

Making a stew with kale, potatoes, onions, sprouted mung beans, sun dried tomatoes, veggie broth, garlic, and spices. Smells so bloody good. :)

I'm just snacking...just roasted a huge bowl of frozen green beans that I tossed in olive oil, salt, and pepper. Better than french fries!

I was stoked when I discovered that roasted green beans, from frozen, are delicious. Boiled, I'm pretty 'eh' on.

Stir fry with tempeh over rice! My first time making tempeh and it smells like soy sauce while being steamed. Amazing.

Last night's dinner was awesome. Sushi Guacamole (avocado, ginger paste, sambal oelek, soy sauce, wasabi, and sesame seeds) with cucumber slices
Tonight is leftover soybean taco filling (with mushrooms and vegan gourmet cheese), spinach, and rutabaga home fries.

chili from the crockpot with 3 beans and tvp, cornbread and avocado to put on top. I announced what was for dinner and said, "does that sound like a good enough dinner to you?" sarcastically to my boyfriend, to which he replies in a serious voice, no. So, I'm looking forward to it at least. He probably would be if we had tortilla chips to dip in it.
