Last night was the "Persian multi-bean soup" from Mediterranean Vegan. I completely bastardised the recipe, most significantly by adding three times the amount of spaghetti that I was supposed to, so it was more like slightly liquidy pasta than soup... but it was good stuff! I'm looking forward to the leftovers tonight.

Making a stew with kale, potatoes, onions, sprouted mung beans, sun dried tomatoes, veggie broth, garlic, and spices. Smells so bloody good. :)

I'm just snacking...just roasted a huge bowl of frozen green beans that I tossed in olive oil, salt, and pepper. Better than french fries!

Last night's dinner was awesome. Sushi Guacamole (avocado, ginger paste, sambal oelek, soy sauce, wasabi, and sesame seeds) with cucumber slices Tonight is leftover soybean taco filling (with mushrooms and vegan gourmet cheese), spinach, and rutabaga home fries.

chili from the crockpot with 3 beans and tvp, cornbread and avocado to put on top. I announced what was for dinner and said, "does that sound like a good enough dinner to you?" sarcastically to my boyfriend, to which he replies in a serious voice, no. So, I'm looking forward to it at least. He probably would be if we had tortilla chips to dip in it.
