We had rajma (using this recipe http://smittenkitchen.com/blog/2009/02/ ... ean-curry/), sauteed spinach and tomatoes with garlic, ginger, a bit of curry powder, and rice.

I'd not had rajma before, it was great! Leftovers for lunch today, looking forward to it.

I'm making pho chay to bring to a friend's house, as per special request. I'm also bringing alder-smoked tofu, pan-fried seitan strips, bean sprouts, Thai basil, sliced jalapenos, fresh lime, broccoli and shredded cabbage. Weeeee.

Using my mom's recipe, yum. The sauce is tahini, boshi, turmeric, soy sauce, nooch... I sautee red onions, shredded carrots and red pepper before I add the tofu.

Chili and cornbread. The cornbread was the Veganomicon recipe. The chili used Match meat beef (I found it at Earth Fare!) and Caroll Shelby chili spice mix. My boyfriend pronounced it the best chili I've made. "The least homemade chili is the best one I've made?" "Umm....yes?" D'oh

1/2 chopped red onion
1 large carrot, grated
1 diced red pepper
1 block extra firm tofu
2 tb toasted sesame oil

Sauce:
2 tb tahini
2 tb tamari
1/4 cup nooch
1 tsp turmeric
1 tsp boshi (umeboshi vinegar) (lemon juice will do in a pinch)
1/4 cup water
1/2 tsp garlic powder

Salt & pepper to taste

Sautee veggies in oil until lightly browned and soften. Add crumbled tofu, lower heat, cover and cook for 5 minutes, stirring occasionally. Add a little water if needed.
Whisk sauce ingredients, pour over tofu, cook until heated through. Taste for seasoning and add salt and pepper to taste.

Enjoy!

I had oven chips with a Linda McCartney mushroom and ale pie, first time I've had that and was pretty flavourless and not that great so probably wouldn't buy again but a nice easy Friday night meal.

Made a big batch of brown rice cooked in veggie stock and mixed with lotsa sauteed onions, garlic, habanero peppers, and parsley, then I slapped some refried beans and salsa on some of it for a quick dinner.
