Thai red curry with dry fried tofu and a variety of veggies that needed using up, over wide noodles.

I don't have a name for this other than "noodly stuff," but here's how I make it:

Cook some spaghetti noodles.
While the noodles are cooking, throw some walnuts, sun-dried tomatoes, and minced garlic in a bowl.
Drain the noodles and add them to the bowl.
Add a little balsamic vinaigrette and cracked pepper to the noodles and stuff.
Toss to combine.
Eat.

Mmmmnoodly stuff.

Last night I caved and had food out in Govindas (local Hare Krishna place). They have great food and everything is vegetarian and egg free, and the dairy stuff is all labelled :) Brown rice, butterbeans cooked with spinach, some sort of ratatouille thingie with soya chunks, dhal and spiced potatoes. Stuffed my face.

Tonight is cheeseburger (by request of Man-Thing), baked potato with sour cream and spinach, and probably artichokes as they need eating.

Last night was Moroccan couscous from The Kind Diet with a raw kale/ swiss chard salad with tahini dressing. It was tasty and a fresh, Spring-like meal, but I was craving more soup because it's so cold!

I started off with 2 cups brown rice cooking in veggie stock, than added 1 lb. red lentils and heated 2 tsp cumin seeds/2 tsp dried coriander/2 tsp turmeric/1 tsp cumin/1 tsp cayenne in oil to add after the lentils. This will be a meal basis for a couple of days! This time I topped it with sauteed mushrooms and broccoli...yumminess. :)

Cheddar shreds. The shreds are SOO messy for grilled cheese, but they were in my freezer. I made a grilled cheese with the Daiya jack wedge a couple of weeks ago and it was better for sure.
