Grilled avocado and Daiya sandwich, a glass of sauvignon blanc, and a wheat free chocolate cookie from V'con. Yum!

Yummy! What kind of Daiya?

Cheddar shreds. The shreds are SOO messy for grilled cheese, but they were in my freezer. I made a grilled cheese with the Daiya jack wedge a couple of weeks ago and it was better for sure.

I didn't know you could freeze them. Cool!

I'm making lasagna with spicy red sauce, miso tofu ricotta, garlic tossed spinach & chickpeas, sunflower/tofu cream sauce (boo to cashew allergies) and maybe an apple pie! We've been out of town and home cooking is back, baby.

We had steamed beets, sunchokes, brassica greens, and shallots with a sauce made with slivered garlic, lemon juice, Old Bay-type spices, and whatever else my husband put in, served with a healthy side of potato chips.

We had spaghetti with chestnut mushrooms, red pepper and spinach in a cream sauce (sauteed mushrooms and pepper, added two cloves of garlic, added alpro cream, herbamare, black pepper, nutritional yeast, chopped baby spinach). Yum!

a bastardized version of Vcon's red lentil cauliflower curry in the crock pot, with sweet potatoes and canned tomatoes added.

I slammed it together before I left for work so hopefully it all turns out ok.

The Flying Massaman curry from Vegan Eats World. First attempt, so I'm hoping it'll be good! And a rhubarb crumble + Oatley ice cream for dessert. Haven't tried the Oatley ice cream before, so that will be interesting.
