Today's a long day with an early dinner of crispy kale raab, pesto-mellow white miso roasted cauliflower, garlicky cheesy grits (with a smoked jalapeno cheddar from AVC hanging out in my fridge) and a big salad.

Big Salad! It's gonna have baked, marinated super-firm tofu, grated horseradish, onion and dill cheese from The Uncheese Cookbook, Caesar Chavez dressing, and a bunch of different veggies. I'z so excited!

How have I never had the Wildwood Sprouted Super-firm tofu before?! It's amazing! I even ate a bit raw right after I had tossed it in the marinade.

Dinner #2 in prep for another day of outdoorsy exertion tomorrow... sun-dried tomato/basil Tofurkey, cannelini beans, roasted diced tomatoes, and parsley over black quinoa. Enough leftover for a big breakfast before taking the bike out tomorrow! I need this warmer/sunnier weather in the worst way.

Mashed rutabaga/potatoes (I got a rutabaga larger than my head from the CSA), steamed beets and baby brassicas with a garlic-wine-lemon sauce that has become my husband's signature dish, and berbere fried tofu cubes. Fusion!

Tonight will be roasted chickpea tacos in corn tortillas with brussel sprout/red pepper slaw, mashed avocado, salsa, hot sauce, and maybe some cheezy sauce.

Vcon's Seitanic Red and White Bean Jambalaya. My cast iron pot was almost totally full to the brim when I put it in (and incredibly heavy) so I hope it doesn't boil over tooooooo much.
