More red curry, this time with Thai chili, mango & fried tofu with vermicelli. Now I'm out of paste, so i get to make more from another region in this book I'm digging!

Curry made with panang paste, coconut milk, aubergine, courgette, mushrooms and green beans, served with basmati rice. 'Twas delicious, looking forward to leftovers for dinner tonight.

Taco salad! Avocado lime dressing, pinto beans sauteed with field roast chipotle sausage with romaine, tomatoes and crumbled corn chips. I was pretty proud of that one!

Last night we ate at the hotel restaurant which I'll explain, but tonight we are going for Indian.

The hotel was great about accommodating a vegan and vegetarian, and what I told Jay was that I'd be happy with anything that didn't contain cooked bell peppers and/or cooked celery. What I got, hilariously, was a bell pepper stuffed with cooked celery and leeks, along with a yam mash that tasted like canned baby food with about a quarter cup of salt in it. Kudos to them for trying, though! The bread rolls looked lovely and came with a vegan olive oil spread, but they also contained cheese.

So tonight! I will most likely get vegetable madras (my stand-by in the UK) and garlic naan if they can make it vegan.

Aw, vijita what a bummer! Sometimes I really wonder what is going on in the mind of the chef, because that sounds super gross!! I hope your indian food was much better!

Tonight I had a bare veggie burrito bowl from Baja Fresh, with extra grilled veggies piled on top. It was delicious until I bit down on chicken chunks and then I had to floss chicken pieces from my teeth. :( Somebody didn't clean the grill!!
