Last night I spread avocado on a chipotle tortilla and a spinach tortilla, then filled them with chick peas, tomato slices, mixed greens, and slices of Mioko's buffalo mozzarella. It was so good.

Buffalo tofu sammies sure doesn't sound bad either! Yum!

This is how I made the enchiladas, it's sort a mix of different recipes I've found on the internet. It was so delicious!

1 lb chicken style seitan, cut into thin strips (I used the one from Viva Vegan, bet you could also use store-bought chicken strips or soy curls hydrated in "chicken" broth)
2 tbsp minced garlic
1/2 tsp garlic powder
1/2 tsp cayenne pepper
1/2 tsp paprika
1 tsp chili powder
1 tsp cumin
oil for frying
salt to taste

1 zucchini, diced
1 onion, sliced
1 1/2 cups frozen corn
oil

1 4 oz can mild green chiles, drained
about 1 cup of cream cheese (I used homemade, didn't really measure)
shredded cheese (optional)
green enchilada sauce or salsa verde
tortillas, as needed (I used whole wheat)

Heat the oven to 500 F

Put the veggies on a baking sheet, toss with some oil. Roast in the oven until onion starts to brown.

Meanwhile, heat oil in a skillet, fry the seitan for 5-10 minutes, until crispy. The last couple of minutes, add the garlic and spices.

When veggies are ready, remove from the oven, transfer to a bowl. Mix in seitan, chiles, and cream cheese. Taste for salt and seasoning. Turn down the oven heat to 350.

Fill the tortillas with the stuff, roll them up, but in a baking lightly greased baking dish, cover with sauce, and cheese, if desired. Bake for 25 minutes.

I had mine with avocado and a lot of hot sauce. <3

Sushi for the third time this week. It's all I want to eat as soon as the warm weather hits! Tonight was a sweet potato tempura roll and an I <3 roll - avocado, ginger, and crispy tempura bits with inari wrapped around it.

I had half a Weeping Tiger sandwich (noochy tofu, sriracha, jalapeno, vegenaise, tomato, etc.) at the Bye & Bye over farewell drinks with friends who were in town.

Biscuits and gravy. Sundays are run/ride days and we usually have breakfast for dinner. All I had was vanilla soymilk so I used water/veggie broth in both and they were great.

I'm making a spicy coconut lime red lentil soup. It should be good. It's really hot here, but I still want soup. I might fry some papadums instead of the flat bread I'd planned.
