Leftover clean-out-the-fridge stir fry with bok choy, bean sprouts, seitan, and shirataki noodles. It was okay, but the West Soy seitan I used was soooo salty! Next time I need to not be lazy and just make my own.

Smoky soy curl salad from Vegan Diner. I had ordered some soy curls months ago, meaning to make this recipe and today was the day! My fiance was a little weirded out by how similar he found it to beef... Haha. The smoky soy curl recipe is definitely a winner and I'm planning on using it on top of Vietnamese bun to imitate the charcoal BBQ used at restaurants.

Oh, and we also had baked potatoes with EB and Tofutti sour cream.

Last night was a clean-out-the-fridge spaghetti with balsamic roasted brussels and green olives, garlic, leftover tofu and sun-dried tomatoes in a white wine sauce over spaghetti.

We made a cold spread, seeing as today is probably summer for the UK. Cashew brie, frijolemole and garlic tofu mayo, tomato, lettuce, carrot sticks and corn tortillas.

I'm having a sandwich that's local tofu/tahini/sririacha/tomatoes with a side of roasted brussels sprouts instead of french fries and let me tell you, after 8 years I think I have finally achieved veganism.

i had a salad w/ all the good fresh veggies and some crispy tofu and i was like, "hooray!! i'm being healthy!!"

... and after that i made carob chip pancakes... they were equally delicious.

No fresh ingredients = pantry soup with canned tomatoes, frozen corn, and lentils. It was... edible? The bad news is that I have to eat it for 6 more meals, but the good news is that I don't have to cook for 3 days.

I made a lentil and red chard dahl and ate it with a salad of camargue rice, quinoa, pistachios, orange, dried apricots and rocket. The salad recipe is an Ottolenghi one I found here: http://www.guardian.co.uk/lifeandstyle/2007/feb/24/foodanddrink.recipes1.
