I stopped by a deli near my work with coworkers, expecting just to get a ginger ale and participate in gossip, but one of my friends insisted on asking for a vegan panini for me. I just told them to put whatever on it that was vegan, and it contained spinach, black olive tapenade, artichoke hearts, smoked tomatoes, garlic, and probably something else! And it was on delicious local bread and grilled (with olive oil) to perfection. Holy moly, I think I have a new work lunch spot.

Lentil/sweet potato curry with brown rice and some veggies. Definitely avocado, maybe some broccoli.

i think we're making breaded pesto 'fu over polenta with roasted tomatoes and a bit 'o daiya this evening. pretty easy and it sounds like it'll be tasty for a meal that'll use up a lot of what we need to use up.

I made a bowl with kale, zucchini, red pepper, chard, kale, mushrooms, black eyed peas, quinoa, and Isa's Franks's Red Hot Tahini. Holy crepe, why have I not made that sauce before? I'm thinking I may have to buy stock in Frank's.

I just found out the wedding I'm bartending/supervising at tonight is vegetarian! MAYBE there will be something vegan! We always get fed by the caterers but I can usually only eat salad greens and rolls.

4 scrambled burritos from VSSSTD, with some veggies on the side (bell pepper, cucumber, avocado, carrot).

I eat wraps and burritos way too often I feel. No regrets.

A salad with blackeyed peas, sauteed broccoli, and onions and habaneros I had marinated in dressing and lemon juice. Pretty darned good.
