Big asparagus salad and a mango coconut water. Best post-yoga supper there is.

Housemate made tagliatelle with tomato sauce and garlicky roasted mushrooms.

Was hungry again later and ate Jammie Dodgers.

Tonight I'm making the tempeh chimichurri on the ppk website...any ideas what I should have as a side? My omni bf is coming over, so I want something substantial to accompany it.

Spicy peanut butter pasta with broccoli!

Ha! that's what I think I will have tonight too!

This recipe: http://blog.fatfreevegan.com/2006/06/pa ... 94142.html

I have not made it in FOREVER. I add dry fried tofu to it for some protein. Even the tofu hating person in my house likes it.

I do use more peanut sauce that the recipe calls for though!

Spring rolls and chilli garlic tofu followed by kung po tofu and black bean tofu with brown rice. Yum!

Yesterday I had a casserole that consisted of brown rice, spicy seitan strips, cheese sauce and salsa, with avocado, hot sauce and roasted cabbage.

Today I'm making enchiladas, because I have a lot of homemade salsa to use up.

I guess it was... a banana with PB, some waffle fries, then a bunch more PB. Not really dinner, but yeah, it was one of those nights.

Lentil soup. I'm doing a pantry challenge. No buying food for as long as I can stand it! My tentative goal is July 1, but we'll see.

I went to Millennium tonight! I had some kind of tempeh dish and it was a-ma-zing.

Then I was going to get dessert but my omni dining partner wanted to leave and get gelato so I got stuck a cup of sorbet instead of delicious vegan cake. Sad panda!

Chickpeas mixed with brown rice that was made with sauteed garlic, coriander, and veggie broth topped with salsa.

Can't wait. :)

i made 'beef' and broccoli with Chloe's sweet & sour sauce.

I used arrowroot in the sauce this time. Previously I used cornstarch...this time it did not thicken up as much...still good though. Is there a big difference between arrowroot & corn starch as a thickener?

Pasta, chickpeas, olive oil, garlic, dried herbs. I'm hoping easy cooking will leave enough energy for cleaning...

I had an absolutely horrible day at work and followed it with a dinner of French fries and wine. I'm not proud.

Absolutely nothing sounded good tonight, so I ended up having a banana smoothie, a plain toasted onion bagel, and a cookie.

The bagel was good, except it had forking fennel seeds on it. WHY would you do that?

I'm so stoked to be back in the kitchen tonight. We're having cheesy grits, roasted asparagus and garlic flowers, chilled beet slices and smokey black-eyed peas if they're done cooking by dinnertime.
