Oooh! We were invited over to a very dear friend's friend's house (not a typo), and we all made a vegan feast together! Fried black bean patties with a roasted green chili salsa, dill mustard potato salad, slaw with an amazing tahini dressing. Yay! They had a working oven! I was feeling so malnourished today and tonight's meal made primarily from veggies grown right on the property was so appreciated. And you know your friends are wonderful and really care when they aren't vegans but are more than happy to cook a fully vegan meal! They even bought Coconut Bliss for dessert, which (shhh) I totally don't like but I ate it anyway and it tasted better than usual because of the love.

We are off to Southwold for the day ... much as I am going to love walking along the shore there is NO reliable place to eat ... now The Swan has been receiving paying guests for 350 years so I shall talk with them when I get there BUT I am taking supplies packed in a cool box ... Granovita pate sarnies with chutney, tofu wieners, Hazelnut Alpro, strawberries and a half dozen apples ...

Black pepper tofu (the one from Plenty) with rice. So good, even with the chillies that I bought being super mild.

record breaking heat due here today ... we have to eat later - avocado with lovely garlic dressing, vegan sausage from Devon, cold boiled Jersey Royal spuds, romaine, watercress & argula greenery, tiny Italian cherry tomatoes and strawberries!

I made the chard frittata from VB last night. I added some leftover daiya cheddar and some black salt to make it eggier and it was amazing. It's become a regular meal because it's so fast (I saute all the veggies in a cast iron skillet then mix in the mashed tofu mix and bake it in the same pan) and uses up tons of greens from our CSA.

I made this carrot and chickpea salad from Serious Eats - it was stupid delicious, I can't recommend it enough. I subbed peanuts for the almonds and didn't bother frying them because it's 900 degrees out here. Also reduced the oil drastically because I have Issues with large quantities of oil.

I finally found the Gardein burgers and will having them with baked potato and corn on the cob.
I am hopeful that they are as good as everyone says. I need a good burger.

An arugala, romaine and red romaine salad from our garden topped with an avocado/tahini/lemon dressing,
with polenta from the Elizavegan blog. I made it with kale and black olives inside, topped with some daiya havarti.

I'm stuck in my house this week (doctor's orders!) so I'm making do with what's in the fridge and pantry- which is a fair effort since we came back from overseas last week and haven't gone properly grocery shopping yet, we've just picked up bits and pieces as we need them. But I managed to put together some pizza mac and cheese (from Isa Does It) and the PPK blog chocolate yoghurt bundt cake with strawberries for dessert. A decent effort, I think!

SO hungry! I made piles of roast veggies today - fennel, mushrooms, eggplant, zucchini, onion, beetroot, red capsicum, sweet potato - and I'm serving it with a mixed rice/grain blend and spicy peanut sauce. There's a carrot cake cooling at the moment and I just whipped up some lemon cream cheese frosting!
