i never thought to combine habanero with ranch. it sounds gloriously good. totally giving this a whirl!

tonight we're having creamy tomato-cashew pasta with sauteed lemony-garlicky asparagus, and of course buttery noochy bread.

I am supervising a wedding tonight that has me SO stressed out for various reasons, but the bride knows I'm vegan and asked the caterers to prepare a vegan plate for me to put away and eat whenever all the craziness is over (so, 1 am). But still, SO sweet of her since I'm not actually a guest! I wonder what it will be. Probably just whatever was already vegan, so a dry baked potato with chives, maybe a salad, and maybe some grilled veggies. But still. I eat so many potatoes at every wedding I work that I have come to crave them madly. Maybe I will remember to bring some earth balance, scriracha, and nooch and then voila: gourmet 1 am meal, right?

Do you just smash some habaneros with ranch? Cos that sounds super tasty.
Tonight my boy and i are watching movies and eating some mad snackage. He's really missed wings since going vegetarian, so my goal is to make him the best vegan wings ever. My first attempt will be Gardein scallopini wrapped in spring roll wrappers, fried, then covered in the spiciest hot sauce i can find. Plus Sanctuary dip. I am also making mac n cheese cups, fried rigatoni stuffed with pesto tofu ricotta, and caramel chocolate popcorn.

I am making veggie meatball sandwiches because we are going to a minor league baseball game tonight with friends. Things are so expensive even there so as long as we eat now we will probably only want a small snack like roasted corn, tornado potatoes or fried pickles while we are there. That way we can keep the costs down.

I was going to have vegan hot dogs and chips, but really can't be bothered with turning the oven on in this heat.
Instead I'm making a weird hot dog casserole (chopped tomatoes, chopped vegan hot dogs, vegan ham, soya mince, onion, peppers, soy sauce, herbs, garlic and pasta) made in the slow cooker.

Tonight I am using the leftover marinara sauce from the meatball sandwiches and making spaghetti with a salad and cheesy garlic and herb bread. The weather is rainy here so I wanted something comforting and homey.
