I'm making an eggplant-chickpea curry, combining two recipes and adding some leftover coconut milk I have in the freezer.

Trying the eggplant dengaku and sushi roll salad from Appetite for Reduction. I'm cooking up some zucchini with the eggplant for my eggplant-phobic husband, so hopefully that's tasty too.
