chopped smoked tofu, chopped artichoke, chopped olives, chopped large cherry tomatoes, broccoli with an inept but tasty sauce of V8 and original granoVita pate ... which I LOVE so much if they stopped making it I would be desolate ...

a large glass of white wine ...

Roasted carnival and ambercup squash, BBQ tofu and garlicky kale. Oh, and some Asda own brand gluten free jammie dodgers.

Socca pizza! With marinara, fyh mozz and fresh tomatoes and smoked salt. Socca is my favorite easy dinner. I can't get over it.

Millet, corn, & greens soup with cheddar-green onion biscuits. I am having some for my pre-work snack, and then at dinnertime on my break at work. Yummmm.

defrosted spag sauce that I made last year with curly pasta, undressed romaine for salad ... lots of nooch (my flesh-eating husband says it is BETTER than parmesan) and English strawberries for pudding.

I just threw some tiny tofu cubes (I'm still chewing on one side, oy) marinated in sake/sesame oil/soy sauce/nooch/garlic in the fridge to serve with rice and sauteed collards tonight.

My coworker made me a harvest stew. It was really sweet of him. He made a vegan version (oil and soy milk in place of butter and cream) and a non-vegan version so he could try which one he liked the best. He preferred the vegan one! But he still gave it all to me because I am sick, and I was telling him how much I like apples and winter squash in soups and stews but my husband is anti-cooked fruit so I never add them unless it's a blended soup. I had it with crackers and Vegusto Piquant from my mum (!), and focaccia with curried sunflower pate. I am sick of being sick but people can continue to spoil me all they like.

Tonight my mum and I will make something together as she is visiting. She just got back from Italy, and I'm thinking of veganizing an arancini recipe with wild mushrooms, melty Vegusto mozzarella, and a white wine basil risotto for the rice.

your tacos sounds marvelous, jdfunks! i'm thinking we might have taco night tomorrow.

tonight was acorn squash stuffed with cranberries, soysage, walnuts, brown rice, green onions, parsley, and shredded carrots. i should have sauteed the carrots, but it wasn't too shabby. next time i'm gonna add mushrooms to the mix.

Mum is cooking for me again! Cauliflower pot pie with black olive crust and the baked potato and greens soup for freezing, both from Veganomicon (her favourite cookbook). Aww!

That is so dang endearing!

I'm making a super clean-out-the-fridge curried corn, white bean, summer squash & hot chili chowder.

Spicy garlicky stir fry of tofu, eggplant, mushrooms, and konjaku noodles with lots of Sezuan pepper and Thai basil, made by my wonderful spouse who was all worried that it wasn't turning out right. But it was very good.
