Scallion pancake and then red curry tofu at a local pan-Asian place. And lots of sake. The curry had lots of okra in it, which I've been craving, and potatoes, which I've never had in red curry before. It was good.

I think we are having some kind of spicy coconut tofu/veg rice bowl. We are out of kimchi, so sriracha will have to do.

Needed to start cleaning out the fridge for the holiday, so I threw some oil, salt, pepper, onions, garlic, and spinach into a pan. Added a veggie burger (no roll) topped with salsa and hot sauce.

I made two-cheese mac and cheese with caramelized onions. It's a creamy cheddary sauce topped with tofu feta. I loved the tanginess of the tofu feta.
