Tonight is the curried peanut sauce bowl from IDI. It's all prepped and ready to eat, so I have no excuse to eat anything other than a healthy balanced meal (but my co-workers all went out for tacos for lunch today and now I want tacos instead).

I'm feeling incredibly lazy today so I'm having store bought mushroom rice with Nuvale seitan chunks, peas, mushrooms & onions.

As I was menu planning this week, I remembered that I don't always need to make such a fuss over dinner. So, tonight it's 15 Minute Meal time. We're having bean and corn quesadillas, guacamole and salad. The most time consuming part of the meal is making the guac.

I'm thinking something with Swiss chard, but no idea what because I've never cooked with it!

some kind of miso-y stiryfry over noodles, e.g. with carrots and bell pepper?
or some kind of thai/coconut-y curry?

This is going to be so good and I had absolutely no inspiration/will/or new ingredients when I started puttering around!

Baby kale and pea shoots in a sesame oil/lime juice simple dressing, mashed turnips with roasted garlic, a couple of potatoes, roasted jalapeno, and lots of pepper, beer and Franks-marinaded tempeh baked in the marinade (copyright Brian I think?) then drained and broiled, parboiled then sliced and roasted potatoes, and roasted leeks. All with a lot of fresh lemon. Awesome fridge clean-out!
