Tonight is the curried peanut sauce bowl from IDI. It's all prepped and ready to eat, so I have no excuse to eat anything other than a healthy balanced meal (but my co-workers all went out for tacos for lunch today and now I want tacos instead).

in honor of mar's bday tomorrow, i am jump starting his fave meal tonight. he loved pasta (pawsta)....so pasta with leftover vegan crumbled links, side salad (i wanna do a russian dressing - playing around here with dressing combos) and crescent rolls (which he loved)....

As I was menu planning this week, I remembered that I don't always need to make such a fuss over dinner. So, tonight it's 15 Minute Meal time. We're having bean and corn quesadillas, guacamole and salad. The most time consuming part of the meal is making the guac.

This is going to be so good and I had absolutely no inspiration/will/or new ingredients when I started puttering around!

Baby kale and pea shoots in a sesame oil/lime juice simple dressing, mashed turnips with roasted garlic, a couple of potatoes, roasted jalapeno, and lots of pepper, beer and Franks-marinaded tempeh baked in the marinade (copyright Brian I think?) then drained and broiled, parboiled then sliced and roasted potatoes, and roasted leeks. All with a lot of fresh lemon. Awesome fridge clean-out!
