Black bean soup and corn bread, both from the freezer, and I will also saute up some zucchini.

Hazelnut brownies, very liberally laced with Cointreau. I also added orange zest so I get some vitamin C to go along with all that iron in the dark chocolate.

I also have roasted green beans, mushrooms, and sweet potatoes, but those are not the main course and mostly exist so I don't feel bad about eating a pan of brownies.

The tamale pie from World Vegan Feast. It's really good! Kind of time consuming to make, but delicious and definitely less time consuming than rolling up a bajillion tamales

Really late lunch, since I'm having a late dinner out tonight with friends: gong bao soy curls with peanuts & chiles and stir fried szechuan cabbage from land of plenty, with steamed quinoa/amaranth.

VWAV veggie burgers. I started adding mashed potato flakes to the mixture after I take it off the stove (as well as a bit of VWG as I always have...no oat flour) and they are holding together a lot better!

We ate massive amounts of Indian food: rasam to start, then paratha, cilantro chutney, curry roasted cauliflower and chana masala. I might not need to eat for the rest of the week. So much deliciousness!

I just remembered the butternut squash I roasted the other day, so I'm thinking something like this: http://www.katherinemartinelli.com/blog ... en-recipe/ with some choy & heirloom carrots

Tacos: soft corn tortillas, refried pinto beans, home made salsa and guacamole, spring greens, sliced green olives. Maybe a little Daiya jalapeno garlic havarti. Probably a sprinkle of nooch. Probably margaritas.

another salad: greens topped with Ohh She Glows tempeh, roasted crunchy chickpeas, hummus and some left over toasted bread on the side. Still debating/deciding on what dressing to make. Maybe my yum dressing...
