I'm making spelt tagliatelle with organic courgette and carrot strips, dressed in avocado oil, s&p, a little garlic and sunflower seeds. I can't wait to get home :)

Spaghetti (or maybe it's capellini, haven't started it yet) with shiitakes roasted in a garlic/caper/parsley/butter sauce with sides of balsamic arugula and fresh rolls.

Dinner last night was amazing! I rolled out a Trader Joe's garlic and herb pizza crust very thin, brushed it lightly with white truffle olive oil, and topped with sliced roasted red bell pepper, onion, and mushrooms, and slices of AVC brie, sprinkled with dried basil and fresh thyme leaves. While it baked we had some lentil soup heated up from the freezer. The flat bread/pizza creation came out sooo good, thanks in large part to the wonderful brie made by pepperpot. Thanks again for the brie pepperpot! I have to work on making some myself.

I made an oddball but intriguing, clean-out-the-fridge butternut, carrot & sweet potato bisque with Vietnamese curry powder & blood orange juice. Plus, summer rolls later on while out.

I'm going to make stuffed artichokes for sure. I'm not sure what else. Maybe the v'con Cesar salad. Maybe angel hair pasta with garlic and olive oil. Maybe some meatless balls and marinara. Possibly broiled zucchini. Can't decide!

I made the Ethiopian Stew from Soup's On but I made so many changes/subtractions/additions that I think the only ingredients that appear in the original are garlic, onion, red lentils, berbere, but what I made with every veggie in my fridge is pretty awesome.

I made chickpea tofu, green beans and served with mash potato flavored with lemon and korean chilli paste and lemon and with the blueberry bbq sauce. It was yum and very different!
