your post gave me the idea to do a quick marsala for dinner last night. i used gardein scallopini and made a quick cremini marsala sauce served over no-egg noodles with asparagus.

ameyfm's dal palak with kale or mustard greens! it's so good! and tofu grilled with some tandoori spice rub that was on clearance at the indian market.

Last night I made the avocado potato salad from vegan brunch to go with grilled veggies. My plan was to have a gardein scallopini on the side but got too tired.

Tonight is more sunflower mac sauce on penne with broccoli. And probably leftover potato salad.

Last night was fajitas with Beyond Meat strips (my first time), onions, peppers, mushrooms, red cabbage, lettuce, lime/vinegar marinated beets, avocado & cheesy sauce. With a side of yellow garlic rice & black beans.

Tonight is leftovers, so scrummy!

My mum and I made yuca fries with a chipotle lime aioli, roasted cauliflower with spicy strawberry tahini sauce, and then we had leftover chana masala that she made the other day. I am going to miss my mum visiting! My husband bought mini vegan fudge cakes for dessert, but they tasted way too gluten-free. :(

I have an entire pantry and freezer-ful of curry pastes to use up before moving, so tonight will probably be a Thai-ish soup with lots of shiitakes, summer rolls with ramps, crispy tofu, vermicelli, and cilantro, and probably more roasted cauliflower but this time paired with the aioli we made for the yuca fries. I have a bunch of palm sugar to use up so I'll probably make a peanut chile sauce to go with the rolls. Oh and I will toss some lightly steamed sprouting kale in that strawberry tahini sauce. Clearing out the fridge is turning out to be fairly gourmet!

Chickpea and spinach curry leftovers tonight. From VwaV, I think? I memorized the recipe a long time ago and probably only approximate it when I make it now but it is so easy and yummy I make it a lot!

Pasta e fagioli with orzo pasta and kale thrown in because greens are good.

The last two nights were refried bean burritos with Mexican rice, last night included quinoa salad with mango and black beans a la Vcon.
