Sunday was vegetable dumplings from the freezer, fried to delicious goodness.

Yesterday night was vegan diner chili, also out of the freezer.

Tonight is balsamic braised chickpeas.

I found a jar of my favourite hoarded jerk sauce from Vancouver in the back of my pantry! Sometimes, cleaning out the pantry does not suck. Jerk everything tonight, and I'll make a vinegary coleslaw or something to balance it out.

Last night I made the pasta puttanesca from IDI plus a dried chili pepper and fresh parsley since I don't buy fresh basil much until summer. Tonight's gonna have roasted asparagus and either mashed or roasted russets....and something else I'll figure out.

I came home from the hospital (long story, I'm okay!) and Jay had made me lemony garlic quinoa, smoky and spicy collards with pistachio crumbs, an Amy's California burger cooked adorably with BBQ sauce and horseradish vegenaise for dipping. It was the cutest meal ever. The quinoa was in a heart mold with a cilantro-cayenne-nooch topping.

I totally understand this.

Tonight's dinner will be a sort of chili mac casserole that I slopped together with leftover sunflower mac sauce and it tasted reallllllly good before I put it in the oven.

I'm pretty excited.
