It was so fun! Plus, I made enough dough for another 'za this week! Mmm, grilled tempeh...

Tonight is a mish mash of brown jasmine rice (which I soaked because I was thinking curry, and then realized I was short on stuff), plus roasted potatoes & turnips, baked tofu and steamed kale.

I threw some pasta & peas into the cheesy broccoli soup from Chloe's Kitchen to make a fast Mac N Cheese.

IDI Every Day Pad Thai, although we're using pea shoots instead of bean sprouts because I grabbed the wrong package off the shelf at the grocery yesterday.

ouch! I'm sorry to hear you're banged up, jdfunks. :(

tonight's dinner: minestrone soup! one of my top 5 foods of all time.
I made a gigantoid pot of it last night - even with two huge servings each last night... there's plenty left for tonight. yay!

I made a frittata using Vegamigo Omelet mix. It was good but I ate it so quickly I barely tasted it

Rachel sandwiches! Toasted multi-grain bread, Tofurkey slices, melted cheddar daiya slice, homemade thousand island dressing, and homemade cole slaw. Yum.

I'm making tempeh sammiches with fruit or yam on the side. Not sure how I'm going to pepare the tempeh, if I can't decide I might just eat it raw and stuffed in a pita. Love tempeh!

Spaghetti puttanesca and rum cocktails. Plus, chilling two types of cookie dough to bake once it cooks down.
