I was feeling super lazy tonight, so just went with a midnight smoothie. Sometimes it's nice just having to hit the "blend" button and voila, meal done.

We had giant pakoras with amazing spicy mint chutney from the farmers market with the intention of following it with a big salad and grilled leftover pinto chile seitan, but the pakoras were so filling that we nixed the rest. Tomorrow I'm making Israeli couscous tabouleh, which sounds kind of boring, but I've been craving it and I have a tonne of parsley to use up. We'll have it with that seitan with a mustard sauce and probably a green salad with tahini dressing.

My favorite food - Pesto Pizza! Besides pesto its going to have asparagus, red bell peppers, red onion, kalamata olives, and shrooms. I'm using the Vegan Pizza Easy Peasy Crust recipe and Zesty Pesto recipe with added lemon juice and subbing almonds for the walnuts. YUMMY!

VEW: red lentil dahl with tomatoes and curry leaves: and spinach coriander roti. Grilled asparagus with mixed Indian spices; and a tomato, sweet onion, carrot salad in spiced yogurt dressing. The Roti were delicious, although, I might add even a bit more coriander and cumin next time. The dahl is good, but I feel it is missing something. I think it could use asophetida, but maybe something else too. The salad was amazing, with my own home made yogurt, cause you can't get unsweetened vegan yogurt anywhere yet. I know asparagus is pretty much unheard of in Indain cooking, but I had a fresh bunch of it, and seasoned properly it went quite well with everything else.

Tonight I was home alone so I just made myself a single serving stir-fry with tempeh, broccoli, zucchini, and spinach over rice noodles, flavored with red curry paste and lime juice. Why is it that my off-the-cuff "bachelorette" meals often turn out the best??

Huge salad consisting of the ranch with fresh dill and buffalo tofu recipes from Salad Samurai both of which were awesome as well as lettuce, cucumber, red bell pepper, celery, avocado, and sunflower seeds. It was amazing!
