"Dumpling casserole" aka frozen veggie dumplings boiled and fried to within an inch of their lives so they're falling apart and munchy, dipped in sriracha and rice vinegar.

Aka Mr Moon is making dinner because I'm in too much pain.

I've decided that I REALLY love the texture of seitan sausages that have been in the fridge for a couple of days and then sliced and fried. The farmers market is tonight so I'll probably do some sausages for lunches after we eat our Wednesday night market chana masala (one of the vendors makes it every week with market veggies and sells the glorious results for dirt cheap to market-goers...it's the best!). Observation: I have been craving more protein than usual these days. For breakfast I want to eat tofu instead of toast.

Vietnamese summer rolls with smokey tofu, mint, basil, and other stuff + peanut sauce. I prepped the ingredients last night and made the sauce this morning!

Tonight I had some leftover Indian coconut curry (with chickpeas, kale, red pepper and zucchini) over jasmine rice, and I impulsively added some diced avocado and a bit of kimchi (!) to bulk it up. Twas a magical combination! I can't wait until the next time I happen to have both leftover curry and kimchi in the fridge.

Bowties with cashew alfredo and veggies. It was amazing! I used the cashew alfredo recipe out of AVC which is luscious and lovely to begin with and then I added tons of fresh basil, spinach, sundried tomatoes, and sauteed shrooms, onions, and zucchini. Alfredo was one of my favorites pre-vegan and now it is again!

If you haven't checked out this recipe and you love a good white sauce check this one out because it is so simple yet so delicious!

Yesterday: fideo, refried beans, and intentionally over-cooked jalapeno cauliflower with carrots (day 3 of soft foods for my spouse). Hey, any excuse to eat fideo, the best food ever invented!

Tonight we each got off work at different times and made our own dinners, so I got to indulge myself in crunchy and chewy things: quick and lazy pizza microwaved on a frozen home made roti with jarred TJ's maranara, AVC meltable mozzarella, and fresh basil leaves and garlic scapes from my garden. It was delightful. I also had a green salad with lots of green onions and some chick peas.

vegan sausage, mixed bean salad tossed with a bit of olive oil & lots of torn mint leaves, homemade chutney (gift of a neighbour), tiny roasted potatoes, sugar snap peas, roasted bell peppers with onion, garlic, cherry tomatoes ...

d'oh we are supposed to be having the og seitan stroganoff from VWAV tonight but just realized we are outta paprika. That's just no good. (Partner is supposed to be making it while I'm at work and he's not down to run to the store with our kids for paprika.) hmm we have a pkg of baby bellas that are kinda going off in the fridge + some seitan so it may end up just having it all sauteed in some gravy or somethin'.

Last night I did a throw-together dinner with a couple of friends, and we had summer rolls with red curry tofu, peanut sauce, roasted garlic & olive stecca with grey salt (my little contribution) and a quinoa goddess salad. And two buck chuck Shiraz.

I made red curry tofu this afternoon! Having it mishmashed with ponzu roasted potatoes, simple s&p roasted asparagus, and salad with this crazy homemade rhubarb-tahini vinaigrette a coworker gave me. I didn't bother with anything else except a weird peanut sauce that may end up going with the tofu.

grilling stuff.

veggie burgers, portabello mushrooms, corn, zucchini, avocado squash, yellow sweet pepper, red bell pepper, green onions and eggplant.

I also have avocado to put on top of the veggie burgers for extra yum :)
