I prepped a stir fry for lunch, and then I took a nap, so dinner it was. Thai-style chicken seitan, basil, garlic & red chiles with bok choy and short grain brown rice.

We had all-you-can-eat at this Japanese/Thai hilarious small-town joint that actually had so many vegan options--amazing because we were starving. "Pad Thai" (ugh, ketchup noodles), curry, inari, tofu-avocado rolls, edamame, tempura broccoli and pumpkin, deep fried banana rolls, mango salad, spring rolls, gomaae, fried noodles with broccoli, it was mostly surprisingly good and I was so full. jdfunks, you would have been amused.

We had the grits with fresh corn, chard, and roasted tomatoes from Afro Vegan (my boss' wife gave me a huge thing of frozen corn and tomatoes from last year's harvest), miso-sake marinated tofus, more simply roasted asparagus, and a tiny bit of the French onion soup I made for the work week. I am SO excited for Canada Day on Tuesday because I'm just going to cook and we won't run out of food like we keep doing!

I have leftover rice from a couple of days ago, so I'm making red curry fried rice with fresh garlic, pak choy, napa cabbage, zucchini, basil and beyond meat.

More corn, lots of arugula with tomato and fresh diced asparagus with a simple vinaigrette, leftover tofus, marmite rice cakes.

Canada day tomorrow! Twice fried seitan, a spring-ish herby new potato salad, and something or other else.

It's very apparent that all I cook in the fall/winter/early spring is Asian and Indian food curries/soups/noodles, etc... and all I want in the summer is simplicity and dishes with only a couple of ingredients.

I didn't make any of my planned foods for Canada Day, but we did have fried tempeh with peanut sauce, roasted potatoes, arugula salad, and then everything else we could think of to dip in the amazing peanut sauce I made. Man, I should have written that down. It some good-ass peanut sauce.

Predictably, I'm running low on everything so tonight I'm going to make tofu scramble and baked beans (by request of my spouse--I've never made them before!). Hopefully I will find a vegetable somewhere. To dip in leftover peanut sauce.

I'm going to try vegan dad's roasted tofu because I find it fascinating (http://vegandad.blogspot.ca/2014/06/roasted-tofu.html), and roast up all sorts of other stuff--cherry tomatoes, sunchokes, beets, fingerlings. Some arugula on the side that I scored from a coworker's garden!

Tonight is totally experimental. I think I have a Tofurkey pizza in the freezer...

Hemp/sunflower burgers and eggplant bacon from Ani Phyo and carrot pulp wraps from someplace online. Finally trying something other than kale chips in the dehydrator. My mom really need s to stop trying to make kale chips happen; they are totally not fetch.

As soon as my back recovers from helping with the prep, I'll make a carrot strawberry smoothie from 365 vegan smoothies to tide me over until dinner (we eat late, mostly my fault).

We ate so many snacks at friends' house (cherries, pita chips with really garlicky hummus, popcorn, gummy candies) that we had no room for dinner. We managed to each have a small salad as more of an evening snack.
