congrats! i'm a newbie vegan and i admit i'm a bit intimidated by some of the "weird" or "exotic" (but not really) vegan ingredients. i have baked with flaxseed (i'm in the USA and i bought a pack of ground flaxseed meal by bob's red mill) and it is awesome and wasn't scary at all, in fact, the choc chip cookies i made (recipe from vegan diner cookbook) were down right freakin' tasty!

i recently sprinkled some ground flaxseed meal over my hot oatmeal and felt like a vegan pro ;)

i wish you luck trying out other new ingredients!

Maybe that's actually what's scary about them, they're so tiny you can't see what they're up to until you dough suddenly starts to grow...

But really there's nothing to be scared of, since they are very predictable. Just make sure you use actual yeast. Don't be like me and make a dough from self-raising flour (which I later learned has baking powder, not yeast...), wait two hours while it doesn't rise, and then proceed to make the most gummy pizza in history.

Since then, I've learned to buy yeast packets from the supermarket and follow a recipe from time to time and my pizzas and other breads have been great.
