It's that time again! I'm probably going to do the "Irish Breakfast" this year. Tofu scramble, sausage, fried tomato & mushrooms, heinz beans etc.

I make the stew and salad from this Vegetarian Times article every year (since 2008, when it appeared in the print magazine). For the salad, I omit the eggs, sub veganaise for the mayo and soy milk with a bit of lemon juice for the buttermilk. http://www.vegetariantimes.com/article/irish-feast/

I'm working on a pot pie with porcinis and stout. And a homemade Irish Creme. And I don't know what else. Oatmeal sandwich cookies? I want to make an Reuben-y Hors Douvres, but only because I keep seeing it on menus.

I'm going to make every single thing mentioned in this thread because it all sounds so good. Does anyone have a recipe for vegan corned beef? I don't think I have a cookbook that has a recipe for one in it and I used to love corned beef and cabbage.

I love you so hard right now. I'm on a campaign to stop people calling drinks and cupcakes "Irish car bombs" as well. Care to jump on the band wagon? :P I'm having colcannon for dinner, largely cos I bought scallions and the most gorgeous looking savoy cabbage at the co-op yesterday and hubs said he'd try it, which is practically a victory all by itself (he mostly only ate meat/potatoes/carrots for dinner when we started going out). We'll be having it with chickpea cutlets and veggie gravy, a huge pile of broccolli (as it needs eating) and marrowfat peas (who doesn't love peas?!). So yeah, a coincidentally very green dinner....makes me feel a bit overly hallmark though. To buck the curve I'm not wearing green, going to a parade or drinking alcohol - though that last bit is largely due to antibiotics :)

Betty Goes Vegan has a vegan corned beef and cabbage recipe - which they originally posted on their blogI made it last night, though tweaked a little - made it without the cabbage, and we actually roasted the potatoes (ok, non-authentic I know), but the "corned beef" part we did follow directions for, and it was good! My boyfriend said the smells/tastes of the marinade/spices reminded him of what corned beef used to be like, even though the taste/texture wasn't the same. I've never had corned beef before, but this was tasty!

Dinner was a Colcannon Casserole of sorts (partially mashed taters, beer braised cabbage, bread crumbs to bind, with homemade cheese sprinkled all over the top, then baked) with a seitan brisket. On the side we had Caraway Onion Whole Wheat Bread, and then for dessert I made Chloe's Chocolate Beer Cupcakes recipe, but I doubled it and transformed it into a 3-layer cake with Healthy Top as the filling and Chocolate Ganache smothering the top. Everything was tasty and delightful. Now I'm full and exhausted!

I just boiled half a cabbage, three potatoes, and three carrots in vegetable broth with a wee bit o' liquid smoke and apple cider vinegar. I served it with a Tofurkey kielbasa and some salt, pepper, and malt vinegar. Also, I put a little earth balance on the potatoes.

Meh, I wouldn't be worried about roasting the potatoes - corned beef ain't authentic either lol Plus roast potatoes are awesome!

I made green lentil curry last night. While the flavours were definitely not irish, it was green! LOL! I used green lentils, green beans and spinach for lots of green. Also I attempted my very first try at chappati bread. I was quite impressed with my first efforts. I gave some to my Indian friend who said I did a great job, his only suggestion was next time not to use salt as they don't do that in India.

I made the Mushroom Stout Stew with Biscuits from the PPK blog: http://www.theppk.com/2013/03/mushroom- ... -biscuits/I subbed in Seitan that I made that day in place of the tofu. Those potato biscuits are really awesome. I also made (a version of) Colcannon, for the first time! Simple, just mashed red potatoes, and some fresh (and on sale) spinach and kale sauteed in onions and olive oil. I really dont like the consistancy of Kale, so i chopped it up really fine. It looked really really pretty in the bowl too. My pic is on instagram, and I can't seem to post it. Here is the link http://instagram.com/p/W-1EaEufbe/I kind of had a stressful night in the kitchen, I kept dropping stuff and burning myself etc. So when I finally sat down to eat, I was dissapointed in the meal. But...my partner really liked everything. So I think I let my emotions rule my tastebuds. I do that sometimes. I have leftovers and they are pretty amazing.
