do you find your fav recipe? have you tried to store in freezer? how many recipes have you tried? what kind of pasta do you use? which one is the perfect recipe, to you? which one recipe have the cheesy flavor? i tried: creamy mac and cheezemac 'n vegan cheese sauce (too fat, but yummy) happy healthyish mac & cheese (my fav, but the recipe was in the old board, so) my own recipe (soaked>drained>boiled>blended yellow soya beans, soy milk, nooch, nutmeg, chili, black pepper and salt) v'con's mac daddy (sorry isa, not bad, but there's better)

My favourite is Vegan Dad's ( here), but baked with bread crumbs on top. It's cashew/nooch/tofu based.

I highly recommend the VegNews recipe, but I always add some nooch to it. Definitely doesn't need it, though.

fpr each package of pasta I just blend in my blender two cups of the macaroni water with 1/2 cup cashews, 1/3 cup sunflower seeds, 1/4 cup nutritional yeast, 1 small onion, 1/2 tsp turmeric, 1/2 tsp mustard powder, 1/2 tsp pepper and 1 tsp salt and i pour it over the cooked macaroni. This seems to work the best for me

another vote for vegnews. i usually up the cashews a little, reduce the margarine to a couple tbs, and reduce the bread crumbs.
before i found vegnews, my favorite recipe was off the vegan yum yum website.

I like the vegnews one but haven't tried the Vegan Dads and other listed here. I only made the vegnews one once and it was good. I keep meaning to make it again with some Southern Fried Tofu. yum. Maybe this weekend...

The VegNews recipe looks good...I gotta make that one of these days. I've only tried two recipes, but this one is really good: http://vegweb.com/index.php?topic=8295.0I double the tofu, halve the oil, and omit the salt and garlic powder. It's my boyfriend's favorite, and everyone loves it at potlucks.

I can't believe no one has mentioned the mac and cheeze from Quick & Easy Vegan Comfort Food. That is the recipe that convinced me that I could give up cheese for good!

I love the v'con mac daddy but I leave out the tofu. It freeze/reheats in the microwave really well. I haven't really tried any others though...

Chop carrots add to a large microwave safe bowl with stock and soy sauce. I then cover the bowl and microwave the carrots and stock for about 2-4 minute on 1000w - you could also just cook them on the stove top if you don't microwave or don't have a cover.
Add stock and veggies to the blender with all of the other ingredients and start blending. Add rice milk as needed to get a smooth consistency - I was experimenting and didn't measure this I would say it was between 1/4 and 1/2 a cup.
Now use as you would cheese sauce - we put it in macaroni cheese but I think it would work well on pizza or lasagna and we will be trying out both soon.
I think you could make this soy-free is you had soy-free miso and just excluded the soy-sauce (if you have salty stock you may want to do so anyway). I think we got the spices just right for us as it was strangely cheese like to both of us - maybe a bit less miso/soy sauce next time. The thing that really made it work as a "cheese" was the astringency of the miso, the creamy bitterness of the tahini then the sweetness and texture of the carrots and beans. The creamy protein richness of the beans meant that it didn't need oil or margarine to make it satisfying but the tangy sweet orangness of the carrots made it more convincing as a cheese rather than a hummus type thing (which is my usual issue with bean bases faux cheese). You could remove the nooch but I would recommend trying it with if you can as it does add something AND even if you hate nooch you can't really taste it with all the other flavours. Also, I would omit the pepper entirely rather than replacing with black - the nuttyness is more important here than the pepperiness.
I really think everyone should give it a go - especially if you're feeling a bit under the weather - comfort food with the added bonus of veggies, beans and much less fat than most mac & cheeses (even the vegan ones). We defiantly have a new family favourite!

i made the 'amazing' mac n cheese sauce from the uncheese cookbook the other day. while it wasn't really 'amazing', it was fast and creamy and not altogether gross or anything.
i used to make some thing from vegweb that i really loved, but i'm too tired to search for it now. i'll come back tomorrow to update!
