the vegnews mac doesn't have any nooch in it.

As a nooch-hater, I adore the VegNews recipe. In fact, any idea how many batches I would need to feed 20 people?

my sister hates nooch and she loves this recipe, too!

I usually double the recipe and get 6-8 servings depending on how much other food there is, so um...maybe 6x the recipe?

I'm trying this right now. I made a double batch, and froze half; I'll let you know. I did not use the bread crumbs, and used slightly less pasta.
***PSA***- for this recipe- watch the salt! Add half, then to taste later. Also, smoked paprika on top is really yummy.

I just made the vegnews mac n cheese fot the first time the other night. I loved it. I think the sauce would be good for making scalloped potatoes too.

I've only tried one recipe, which was Stovetop Cheezee Mac from Vegan on the Cheap. It was okay, but actually really good as leftovers turned into Chili Mac.

I make my happy healthyish mac & cheese – which has already been reposted! I use a little bit more mustard now but otherwise much the same as it was back when I first accidentally concocted it.

I always use dried pasta – I use either a gluten free one or the cheapest possible durum wheat one. I half cook the pasta and then mix through the sauce then we bake it for a few minutes with sesame seeds and paprika on top. Yum. Now I want mac and cheese for dinner!

Get Sconed had a mac n cheeze recipe that calls for n.yeast that we like. We do not always have daiya or teese on hand. I have never put it in the freezer but have left it in the fridge after assembling it & thrown it in the oven at night. The noodles I use are the cheap 79c a bag elbow noodles found in the Mexican section of the grocery store!

I find that frozen pasta dishes are drier than before they were frozen - I assume the pasta absorbs some of the moisture. I add a splash of water before I reheat.

another vote for vegnews. i usually up the cashews a little, reduce the margarine to a couple tbs, and reduce the bread crumbs.

I'm gonna try this next time. I really liked the sauce, but it had a little too much margarine for my taste. Thanks for the tip!

B_A_D and I made the vegnews mac and cheese this afternoon. It was awesome. I vote for that one, with less bread crumbs.

I'm gonna make the VegNews one again tomorrow. Perfect cleaning-out-the-pantry-food. And the first vegan m&c I've felt a craving for!

I'm making this for Thanksgiving, but I have to make it a day ahead of time. Should I bake it on Wednesday and reheat it, or just wait to bake it?
