So I'm putting on a vegan bake sale this Saturday (the day after the day after tomorrow! ye gods!), and despite my ceaseless barrage of advertising, only 5 people have signed up to bake. While I am in the process of realizing that the road to donating large sums of cash to a non-profit organization is not paved with good intentions, and I should have just donated $100 somewhere and called it a day, this is what it is. Since January's sale was so successful, I wanted to do this twice a year, but I don't think that's going to fly.
Last time, we sold out of everything that 12 volunteers cooked/baked in 5 hours at a tiny corner co-op; this sale will be at a much larger location with a built-in audience of parents and kids who are learning about nature. I booked the room for 7 hours, naively assuming that a ton of people would be happy to bake, but alas. I am quite worried that I will not have enough goods to feed the masses. I need to rectify this! Since I have off of work all day on Friday, I figure I can make a few dozen... something in between coordinating everyone's donation drop-offs and panicking in advance of the inevitable no-call no-shows. I don't want to shell out a ton of cash for ingredients, because a) I've already done so, because I canned about 2 dozen pints of fruits and vegetables to sell, and b) that just adds to the sting that I should've just donated money straight up.
Does anyone have any cheap, easy-to-make crowd-pleasers that would keep overnight and work well at a bake sale? I'm thinking maybe chocolate-dipped pretzel sticks or something like that? I'm totally at a loss.

I like cookies for bake sales because they bake really quickly. A dozen chocolate chip cookies bake in 10-15 minutes. If you put 2 dozen in at a time, you could potentially have 8 dozen cookies in under an hour. Chocolate chip cookies are classic, everyone loves them. They're not fancy but they are a crowd pleaser and not expensive to make.

for similar reasons ^^, scones. they bake up quick you cut them in slices, and you can glaze them and they're gorgeous. i like the VWAV orange scones best for this kind of thing (i often have to whip something together stat for family gatherings, and this is my go-to recipe) choco-dipped pretzels are a great idea. if it were me it would be cookie and maybe muffin city- quick, no-frills muffins with gorgeous ingredients, mostly pumpkin but probably berry and cranberry too.

Yeah! Cookies and scones it is. I tried to keep it kinda harvest-themed, so pumpkin stuff would be great. I just found out that the venue who's donating the space for the bake sale will be supplying coffee and sugar, all I have to do is bring the soymilk! Huzzah.

Some kind of cookie bar like? Just bake them and slice!
For muffins try the berry Vegan Brunch ones, they are easy!
Maybe pumpkin or banana bread...

I third the scone suggestion. Mini scones or sconelettes would be good. You just roll out the scone dough and cut out little squares (maybe 1 1/2 square). Sometimes people don't want a whole big scone, and sconelettes are cute.

Oh, Stephanie... sad :( I will see if I can squeeze some more baked goods out of my cupboard tonight/tomorrow...I can maybe whip up some cookies or something in addition to the cupcakes I'm making edit: I ran out of flour and vanilla... :( But at least I had enough for the batch of cupcakes I was making!

I just made 30 pumpkin scones, 30 chocolate chip pumpkin scones, 30 sea salt caramels, 40 walnut and cashew turtles, and 4 dozen chocolate-covered pretzel sticks, 2 dozen dipped in crushed peanuts and 2 dozen dipped in shredded coconut. Only two of the five people who said they'd drop their donations off today have showed up. I am so tired. :weeps softly into baked goods: Time to make some cookies...

Oh, that's sad. I'm sorry steph. It's probably too late, but the V'con chewy chocolate raspberry cookies are some of the easiest and most delicious cookies I've ever made. Good luck!

A bunch of people came through today with FLYING colors, baked way more than they signed up to bake, and generally rocked my world.
We raised $866.20!!!!! In seven hours! On a cold, rainy day! In Milwaukee, Wisconsin! Selling vegan baked goods!
I am going to die of exhaustion now, but I wanted to let everyone know that everything turned out amazingly well.
