Pumpkin pie overnight oatmeal! I am currently in love with the overnight oatmeal because I can just grab it in the AM without any muss or fuss. I use the basic recipe from the Oh She Glows website and then fancied it up a little. 1/3 cup rolled oats, 1 TBls chia seeds, 1 cup almond milk, 1/2 tsp pumpkin pie spice, 1/4 and a little bit extra pumpkin puree all mixed up and left in the fridge overnight. Next morning I added some walnuts and I meant to add a spoon of almond butter but in my bleary eyed state I added a spoon of brown sugar instead - it was delicious.

I had an onion poppyseed sprouted grain bagel with a little bit of Earth Balance, leftover basil pesto with sun dried tomatoes, sliced avocado and cucumber. It was so good! I impressed myself with this one, lol.

Completely unhealthy (but amazing) ginger cookies from my local vegan bakery. I could pretend like it's a special weekend treat, but cookies are the only breakfast food I am familiar with.

We went to my husband's hometown for a friend's wedding and having learned from past cruddy wedding food options, went out for a big breakfast to hold us over.

I had THE BEST vegan breakfast sandwich on sour dough toast with scrambled tofu, tomato, avocado, tempeh bacon, and mozz daiya. And roasted potatoes and a blue corn pancake with Earth Balance (!!!) on the side. And they had soy creamer for my coffee! I pretty much died of joy on the spot. This is at a vegetarian cafe (Mother's Market, in Huntington Beach CA if anyone wants to follow my lead), which I will generalize as often not being very accommodating to vegans (not this place in particular, I mean many vegetarian egg/dairy-loving restaurants), so I was pretty stoked.

my new favorite: packet of instant steel cut oats prepared with a pinch of salt, packet of stevia and 1/2 tsp EB, mix in 1 tsp each hemp, Chia, and ground flax, top with Almande yogurt and fresh fruit.

I'm in a hotel so I was totally expecting dry toast and jam but they had soy milk and yoghurts, loads of lovely fresh fruit and some really good bread. So that is what I had, with the peanut butter that I stashed in my handbag.

I had a bowl of Quisp with Silk Iced Vanilla Latte on top, because I was out of other milks. Sounds weird, tastes great. Clearly I am the picture of "clean eating" here.
