The blood sugar crash wasn't nearly as bad as I expected, actually.

My favorite breakfast is avocado toast. I put salt, pepper, red chili flakes, a squeeze of lemon juice, and a drizzle of olive oil on mine.

Today though, I made some pretty yummy oatmeal. I added a little almond milk, fresh blackberries, a couple spoonfuls of Earth Balance Coconut Peanut Spread, and topped it with a handful of Trader Joe's Coconut Chips. I really liked the sweetness and crunch they added.

That all sounds delicious. . . breakfast envy!

Another healthy win today: sugary coffee and about a million potato chips. Granted, I slept really late, and "breakfast" was had at around 2 p.m.

Maybe everyone else already figured this out long ago, but it was a revelation to me this morning ... I only had half a serving of rolled oatmeal in the house this morning, so I mixed it with an equal amount of TVP and cooked it like regular oatmeal. Amazing! The texture was just like thick normal oatmeal, but with way more protein. I won't make it any other way from now on. Now I'm wondering how it would work to do an overnight oats/TVP hybrid ...

For the past three mornings, I've had a vegan Irish breakfast. Grapefruit juice, mixed fruit salad, toast, marmalade, sauteed mushrooms, fried potatoes and onions, broiled tomato, and baked beans. I am so full.

Marks & Spencers has these pretty great fruit cups that have a little thing of pomegranate seeds and a raspberry sauce and you dump it all together and shake it all up. I enjoyed that.
